      Alfajores

      Alfajores are sweet cookies, popular in Peru and other South American countries. Laura measures with a coffee mug, so let's embrace the Peruvian way! 3/4 mug of corn starch 1 1/2 mug of flour 4 heaping Tablespoons of powdered sugar 2 sticks of butter 1 can of Dulce de Leche Put cornstarch and flour on clean counter. Sift powdered sugar on top. Cut butter into pats and mix in 1/2 stick at a time. Knead dough adding more flour as needed to keep from sticking to the counter.

      This is a favorite dish at Mama Charo's house. You can get the Aji Panca at a Mexican grocery store. You can also substitute your favorite sauce or hot sauce. This is also great the next day. 1/2-1 lb pounds beef loin, cut in small pieces 3 potatoes, chopped finely 1/2 red onion, chopped finely 1/2 cup peas 2 carrots, chopped finely 1/2 cup corn 2 cloves minced garlic 3 Tlbs Aji panca (or hot sauce of your choice to taste) 1/2 cup finely chopped fresh cilantro 1 Tlbs salt

      Peruvian Lentil Stew

      This recipe was given to me by one of our students. His mom was cooking while I was talking to him, and I asked what she was making. He said it's Monday so we are having lentils. I thought this was a great idea! After a weekend of eating and drinking, what a great way get back on track with a healthy and inexpensive meal.
