Aguadito de Pollo, also referred to as levanta-muertos (English: "to wake the dead"), is a traditional chicken soup in Peruvian cuisine consisting of chicken, cilantro and vegetables.
Ingredients:
3 large, boneless chicken breasts (traditionally they use a whole chicken, cut up)
1 cup chopped red onion
2 cloves of garlic, ground
aji amarillo paste, or hot sauce, to taste
1 red bell pepper, chopped
2 large carrots, chopped
1 large bunch cilantro, blended with 1/2 cup water
3/4 cups fresh or frozen corn
3/4 cups fresh or frozen peas
6 cups chicken broth or water
1 cup of rice
olive or vegetable oil
salt and pepper to taste
Brown the chicken in olive oil, and remove when cooked through. Shred or chop chicken. Add a little more oil and add onion and sauté for a few minutes. Add ground garlic and aji paste, or hot sauce. Add broth, blended cilantro and vegetables (except the peas) and simmer for 10 minutes. Add rice and peas 15 minutes before serving. Can also make with duck, turkey or your favorite meat.
