This recipe was given to me by one of our students. His mom was cooking while I was talking to him, and I asked what she was making. He said it's Monday so we are having lentils. I thought this was a great idea! After a weekend of eating and drinking, what a great way get back on track with a healthy and inexpensive meal. She puts in whatever leftover meat she has from the day before, which is a great way to use up those leftovers!
1 bag of lentils
1 red onion, diced
3 small yellow potatoes, diced
2 Tlbs ground or minced garlic
2 Tlbs panca pepper, minced or ground
(substitute hot sauce if you like)
salt & pepper
oregano
vegetable oil
any cooked sausage or meat, if desired
Rinse your lentils twice. In a large pot, sauté the onion in the oil until soft. Add garlic, panca pepper, salt, pepper and oregano to taste. Add lentils, potatoes and several cups of water. Bring to a boil and simmer until lentils and potatoes are soft. Add water if it all gets soaked in.
