Peruvian food is the fusion of hundreds of years of culinary traditions from not only South America but Africa, Europe and Asia. The Chinese and Japanese who arrived in Peru in the 1800s have influenced Peruvian cuisine with the addition of ginger, soy sauce and scallions to many dishes. 1 chicken, cut up
2 Tbsp mustard
3 Tbsp sesame oil
3 Tbsp soy sauce
3 cloves garlic, minced
2 Tlbs oyster sauce
1 tsp rosemary
1 tsp cumin
salt & pepper
Mix mustard, oil and condiments in a bowl. Salt and pepper the chicken. Saute the chicken in 2 Tbsp oil in a large sauté pan. Remove when golden brown and cooked through. Add the sauce, stir with a few tablespoons of water. Add chicken and sauté for a few minutes. Serve with rice, potatoes and your favorite vegetable. Serves 4.
