Picante de Carne


This is a favorite dish at Mama Charo's house. You can get the Aji Panca at a Mexican grocery store. You can also substitute your favorite sauce or hot sauce. This is also great the next day.

1/2-1 lb pounds beef loin, cut in small pieces

3 potatoes, chopped finely

1/2 red onion, chopped finely

1/2 cup peas

2 carrots, chopped finely

1/2 cup corn

2 cloves minced garlic

3 Tlbs Aji panca

(or hot sauce of your choice to taste)

1/2 cup finely chopped fresh cilantro

1 Tlbs salt or to taste

Saute onion in oil for several minutes. Add garlic and stir for 1-2 minutes. Add meat and stir until browned. Add the aji panca or hot sauce, stir for a few minutes. Add 1 1/2 cups water and salt. Simmer with lid on for 10 minutes. Add peas, carrots, corn and potatoes; stir and simmer for 5 minutes. Add the chopped cilantro and let sit with lid on for 5 minutes. Serve with rice.
