Arroz tapado

Arroz tapado (Spanish for molded rice) is a favorite dish among Peruvian children because the recipe calls for molding rice and minced beef into a shape. A big thank you to our scholarship student, Erick for preparing this dish with us for #recipefriday.

2 cups rice, cooked

1 lb ground beef

2 small red onions, finely chopped

2 cloves minced garlic, or 1 Tlbs ground garlic

1/4 cup raisins, brown or golden

1/4 cup diced kalamata olives

3 hardboiled eggs, finely chopped

salt, pepper & cumin to taste.

Sauté onions in 2 Tlbs of olive oil for 3-4 minutes. Add ground beef, & spices and sauté until browned. Turn down heat and add chopped olives and egg.

In a small bowl , or 8 oz measuring cup fill almost half way with cooked rice. Add a layer of the meat mixture, then fill to the top with rice.

Serve with thinly sliced bananas that have been cooked in oil. Add a fried egg.
