Jasson makes this soup whenever someone in his family is sick. It warms the soul and heals what ails you.
Ingredients:
2 chicken breasts with skin and bones
5 large stalks celery, cut in half keeping green tops
1 yellow potato, peeled and sliced in 1/2 inch slices
small piece ginger, peeled
2-3 cubes chicken bouillon
1/2 box angel hair pasta
lime and salt to taste
Add water to pot about halfway and bring to a boil. Cut through chicken breasts and add to water (the bones give a better flavor to the soup but you may substitute boneless chicken). Chop the bottom halves of the celery stalks and add all celery including green tops to broth. Add the ginger and simmer approximately 15 minutes. Add potato and bouillon and simmer. In separate pot cook angel hair or your desired type of pasta. When potato is soft your soup is ready. Remove celery tops and ginger and add salt to taste. Serve over cooked pasta and add lime if desired. Serves 4
