Lima Beans - Pallares peruanos

A delicious & healthy side dish or meal. You can serve with rice, or any meat. Be careful not to overcook the beans! They can get mushy quickly. Omit bouillon cube for vegetarian option.


1 small bag dry lima beans

2 cubes chicken bouillon

3 cloves fresh garlic, minced

2 Tlbs olive oil

1/2 onion, chopped

1 tsp pepper

salt to taste


Soak bean overnight. Change the water, and cover beans by 1 inch. Bring to a boil with bouillon cubes, and salt to taste. Simmer one hour until tender. If needed add more water so beans don't dry out. When done they should be a little soupy. Meanwhile, in a frying pan, saute onion in olive oil until golden, stirring often so it doesn't burn. When golden in color, add garlic, & pepper. Stir for a couple minutes and add mixture to the beans. Add salt to taste and serve while hot.
