Pollo saltado

This is a version of the traditional Peruvian dish Lomo Saltado, except it's made with chicken instead of beef. In Peru they typically make the french fries by hand, but to simplify it we used frozen fries. When you make your rice, add 2 cloves of garlic, crushed, salt and 2 Tablespoons of vegetable oil. You won't be disappointed!



1 pound skinless, boneless chicken breasts, cut in thin slices

2 Tablespoons vegetable oil

2 cloves garlic, finely diced

1 red onion, peeled and cut in thick slices

2 tomatoes, cut in thick slices, seeds removed

1 seeded & ribbed aji amarillo, cut in thin slices (may substitute poblano, habanero or other pepper)

4 Tablespoons soy sauce

4 Tablespoons red wine vinegar

1/2 cup fresh cilantro

2 cups frozen french fries, cooked


Season chicken with salt & pepper. Heat a wok or a large frying pan over very high heat. When it is very hot, add the oil and saute the chicken, a few slices at a time so they remain golden. Reserve to a plate, and add onions & peppers to pan. Saute for 2-3 minutes, and add tomato, garlic and meat. Stir for a couple minutes and add soy sauce and vinegar, stir 2 more minutes. Take off heat, add chopped cilantro and french fries, stir and serve immediately with rice.
